Food and Alcohol training

The requirements for training your staff in your pheasant lodge, for food safety and alcohol safety are as follows:

Pheasant hunting lodges both less than 10 rooms, and maximum of 20 guests can cook for those guests without a food manager certification.  You just need an initial inspection, then an inspection every year.  Part of the inspection is cleaning supplies, and ensuring you have the proper supplies for a sanitary kitchen.  This is called a South Dakota specialty resort license.

If you have guests that are showing up for a day, and not staying overnight, you are required to have a food manager license.

General Food Safety for Managers Requirement (in South Dakota)
At least one person who has passed an approved food service manager (CFM) training program on duty at all times.  To learn using the PSCC system at Rserving.com;

General Food Safety for Handlers License (in South Dakota)
The requirement is there must be a certified food manager or food handler physically in the restaurant at all times.  Required training for the food handler must include detailed training on cooking food statutes 44:02:07:28; and cooling food statute 44:02:07:32; clean tableware 44:02:07:25; and sanitation statutes 44:02:07:56 and 44:02:07:58.
Examples of training requirements: 
• The minimum cooking temperature for pork, beef or other potentially hazardous foods
• How long these different foods have to be at that temperature before they are safe to eat
• The time allowed to cool potentially hazardous foods to the appropriate temperature
• Appropriate cooling procedures

General Responsible Serving of Alcohol Requirements (in South Dakota)
Training is optional, but owners do get reduced penalties (in case of problems).  To train using the PSCC system at www.Rserving.com;

Penalties for Selling Alcohol to a Minor For the Server
 
Class 1 misdemeanor (serve to minor under age 18)
Up to one year in jail and/or a $2,000 fine
May also have driver's license revoked for 30 days and up to 1 year
Class 2 misdemeanor (serve to minor ages 18-21)
Up to 30 days in jail and/or a $500 fine
May have driver's license suspended or restricted for 30 days and up to 1 year
 
Penalties for Selling Alcohol to a Minor for the Owner
 
If the Server is Certified:
First Violation –$500  
Second Violation –$1,000
Third violation within 24 months could result in liquor license being revoked.
If the Server is Not Certified:
First Violation –$1,000 
Second Violation –$2,000
Third violation within 24 months could result in liquor license being revoked.
 
Sales to an obviously intoxicated person may result in up to 1 year in jail and/or a $2,000 fine for the server.
